Why We Love It
When you’re living on the road, space is precious. So anytime we can skip bowls, pans, and 47 dirty utensils, it’s a win. Sweet potato toast is warm, cozy, slightly sweet, and endlessly customizable. AND... it’s basically Thanksgiving for breakfast — on a budget and in 5 minutes.
Ingredients
1 large sweet potato
Olive oil (optional)
A sprinkle of salt
Your favorite toppings:
Almond butter + cinnamon
Marshmallow fluff (hello, sweet potato casserole vibes!)
Avocado + everything seasoning
Whipped ricotta + honey + pecans
Instructions
Slice sweet potato lengthwise into ¼–½ inch slabs.
Pop slices into the toaster and toast on HIGH.(It usually takes 2–3 cycles depending on thickness.)
When soft and golden, top with whatever your holiday heart desires.
Serve warm and repeat for as many slices as your kids demand.
