Recipe: Iron Skillet Charred Chilean Seabass — Luxury Dining from an RV Kitchen

Chilean seabass is one of those foods that makes you feel like you’re dining in a five-star restaurant — even when you're standing barefoot in a Class A motorhome with kids zooming around you on scooters.
This recipe takes less than 15 minutes and turns your iron skillet into a gourmet powerhouse.

Ingredients
2 Chilean seabass fillets
1–2 tbsp olive oil
Salt & pepper
1 tbsp butter
1 garlic clove, smashed
Fresh thyme or rosemary
Lemon wedges for finishing
Instructions
Preheat your iron skillet over medium-high heat until it’s HOT.
Pat fillets dry and season generously with salt and pepper.
Add oil, then place fillets skin-side up.
Sear 3–4 minutes until the top is beautifully charred.
Flip fillets, add butter, garlic, and herbs.
Tilt the pan and baste the fish for another 2–3 minutes.
Finish with lemon juice and serve immediately.

How to Finish
We did this for Thanksgiving, so I blended pureed pumpkin with grits in a Ninja blender, threw it in a super-hot pan to get a deeper flavor, then drizzled white truffle olive oil and garnished with air-fried arugula. It was like a Michelin-star restaurant level, but served in an RV!
