Recpie: Cranberry Honey Glazed Salmon — A Festive, Foolproof One-Pan Holiday Dinner

If Thanksgiving and Christmas had a baby, this would be it. A little sweet, a little tart, and ridiculously simple — this salmon is the perfect festive dinner whether you're docked at a luxury RV resort or boondocking under the stars.

Ingredients
2–4 salmon fillets
Salt & pepper
2 tbsp olive oil
½ cup whole cranberry sauce (homemade or canned)
2 tbsp honey
1 tbsp soy sauce
1 tsp Dijon mustard
Zest of 1 orange
Instructions
Preheat your convection oven or skillet.
Whisk cranberry sauce, honey, soy, mustard, and orange zest.
Season salmon and sear in oil for 2 minutes per side.
Pour glaze over top and cook 8–10 minutes until sticky and caramelized.
Spoon extra glaze over the fillets before serving.
Holiday Tip
Serve this with rosemary smashed potatoes (recipe below!) and toasted green beans for a chef’s-kiss holiday meal that still feels light and fresh.
